Waffles are a favorite breakfast food in this house. We have a little waffle maker we got in Lidl a few months before moving here, and it's broken out nearly once a week.
I am starting to get bored of plain waffles and pancakes. Hence the recent
corn pancakes and this weekend's chocolate waffles.
I based my recipe on
that of allrecipes, then checked out Alton Brown's chocolate
take - they were close enough so all I did was add some cocoa powder and extra sugar to my allrecipes recipe. They turned out dense and rich and went beautifully with strawberry syrup. I'm talking about the real from-fruit stuff, here. Don't you even be THINKING of the H-brand sugar goop. Be careful because these dudes expand like crazy in the waffle maker.
This was the last one of the batch. The rest were devoured too fast for photos. Sorry...
Ingredients
- 2 eggs
- 2 cups all-purpose flour
- 1 3/4 cups milk
- 1/2 cup vegetable oil
- 3 tablespoons white sugar
- 4 teaspoons baking powder
- 1/2 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
Directions
- Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, cocoa powder, salt and vanilla, just until smooth.
- Spray preheated waffle iron with non-stick cooking spray. Pour mix in half- to 2/3-ladlefuls onto hot waffle iron. Cook until crispy; these will turn into crackers if left in too long. Serve hot.
