Breakfast Burritos

Easy, fast, tasty, filling, healthy - and not your average cereal breakfast.  Behold: Burritos!

If you make all the ingredients from scratch (salsa, tortillas, sour cream) they'll take longer.  But if you're lucky (or lazy) enough to have a package of tortillas, a jar of salsa & a container of sour cream, they really couldn't be quicker.

Breakfast Burritos

serves 2
prep time: 5 minutes
cook time: 10 minutes

ingredients:

2 large flour tortillas
3 eggs
salt and pepper to taste
1/4 cup grated cheese
2 tbsp salsa
sour cream to taste
cilantro (optional)

directions:

Heat the tortillas in a microwave, pan, or toaster oven.  Meanwhile preheat a pan on medium with butter or oil.

Crack the eggs into a bowl and mix thoroughly with a fork.  Season with salt and pepper to taste.  Add a splash of milk if you like your eggs fluffy. Scramble in the preheated pan.

Divide scrambled eggs evenly between 2 tortillas, spreading in a line rather than a dollop in the middle of the tortilla.  Top with cheese, salsa, sour cream and cilantro.


Fold the 2 sides of the tortilla at the ends of the "line," then roll up the tortilla.


Not much to look at from the outside, but there's a blast of cheer in there!
