Photo Post: Variegated Latkes/Kartoffelpuffer

Last week I got my hands on a kilo of blue potatoes, most of which made it to the plate on Sunday.  The post for that meal is more complicated and still in the works.  Anyway, we have some blue potatoes left over, so I used 'em to supplement the "normal" potatoes in a batch of latkes.  (and took the opportunity to rework that post; you should visit it, too.)

The stats:
500-somethin' grams white potatoes; blue potatoes to make 750g (before peeling)
1 egg
1 tbsp potato starch
nutmeg
salt and pepper
parsley
