We've reached and passed the one-month mark til our wedding! The ATIC kitchen is focusing on lots of last-minute plans instead of trying out many new recipes. And since we're 8 hours ahead of the wedding location, dinnertime is often the earliest we can get in touch with any of our local support!
We are sticking to recipes we know for a while, but will be back with lots of variety at the beginning of June. And whenever I get the chance, I'll work through one or two of the posts I have in my backlog!
Meanwhile, spring has come in. Finally, I feel comfortable saying that. We have chilly days, and rainy days, and windy days, but sun and warmth too. I got my first sunburn of the year at lunch last week. Trees are flowering and the bare vines are sprouting leaves. Winter sucked, but there is definitely a magic in seeing nature re-awaken - something we never saw in Ghana where it was a year-round flower garden.
Still, I don't want to go through a winter that gray again for a long, long time.
